#4 Andorra
We made 3 Andorran dishes:
Trinxat, a potato and cabbage hash fried into a pancake. My trinxat was a little too soft to turn into a pancake as shown in the recipe, but it was still delicious.
Espinaca ala Catalan, spinach cooked with apple, pine nuts, and raisins as in this easy recipe.
Pa Amb Tomaquet, a toasted tomato bread with garlic. Here is a recipe for the tomato bread, but I just made this from memory of the decade or so that my sister lived in Catalan and my family fell in love with this bread.
