#4 Andorra

We made 3 Andorran dishes:

  1. Trinxat, a potato and cabbage hash fried into a pancake. My trinxat was a little too soft to turn into a pancake as shown in the recipe, but it was still delicious.

  2. Espinaca ala Catalan, spinach cooked with apple, pine nuts, and raisins as in this easy recipe.

  3. Pa Amb Tomaquet, a toasted tomato bread with garlic. Here is a recipe for the tomato bread, but I just made this from memory of the decade or so that my sister lived in Catalan and my family fell in love with this bread.
