#51 Dominica
It turns out, it was difficult to research foods from the tiny island nation of Dominica, largely because its name is so similar to its more populous neighbor, the Dominican Republic. So, references to “Dominican food” on the internet are almost always from the country with a capital of Santo Domingo, not the one with a capital of Roseau. We ended up making three recipes from Mayma Raphael, who runs a blog about Dominica foods, and is about to publish a cookbook.
For Dominica night, we made:
Callaloo, a leafy green stew with crabmeat;
Fried plantain cups with 4 different salad fillings; and
