For Estonia night, we made:

Lillkapsas juustukastmes, a cheesy cauliflower casserole;

Porgandipirukas, a bread stuffed with carrots;
Rosolje, a beet and potato salad; and

Kirju Koer, or “Spotted Dog,” a dessert made of chocolate cookies and orange candy.
