#59 Eswatini
In case you’re confused, Eswatini changed its name in 2018. It used to be called Swaziland, so you might still think of it as that. They still use Swazi as their demonym, so they are Swazi people and we made Swazi food, but the name Eswatini is a less colonized interpretation of the place name in English.
For Swazi night, we made:
Green Slaai, a lettuce salad with beets and carrots;
Avocado Slaai, another salad with quinoa and spinach;
Shishwala, a stew of maize and beans;
Umbila Wekosiwa, roasted corn-on-the-cob; and
Bhatata, roasted sweet potatoes.
