#13 Bahamas

We tried several places, but couldn’t find any conch. Without it, we made:

  1. Scallop (conch) fritters: even with the substitution, this recipe was delicious.

  2. Bahamian Macaroni and Cheese: this recipe, like the Antiguan one I made a few weeks ago, adds eggs for a custardy macaroni. It’s a different technique than my usual, but I like it. The peppers were especially good in this.

  3. Pigeon Peas and Rice: this recipe made a delicious pilaf that accompanied the fritters really well.

  4. Bahamian cole slaw: this recipe called for raisins, which I was skeptical of, but they were great. I did reduce the amount of mayonnaise by half, and it was plenty creamy.

  5. Benne wafers: this recipe was really easy to make and we thought they were delicious, but the kids didn’t like them. Go figure.

  6. We also made a rum punch from this recipe to enjoy with dinner.
