#14 Bahrain

We made just two dishes for Bahrain night, but they were both substantial and complicated:

  1. Fish Matchboos: the recipe called for hanmmour fish, which we think is a kind of grouper, but we couldn’t find one in Seattle in January, so we went with a trout.

  2. Aloo Al Basheer: this dish is based on a long-standing hole-in-the-wall restaurant that was opened in the 1960’s by a Pakistani immigrant. So, technically, it’s maybe a Pakistani dish, but for a country that is 53% foreign-born, that maybe makes sense? Plus, the Bahraini internet raved about this dish.

We couldn’t get them to stay as patties when we fried them, so we found keeping them in a ball shape worked better.
