#16 Barbados

We made three food dishes for Barbados night, plus two cocktail mixers:

  1. Fish cutters, which are fried fish sandwiches with cheese and hot sauce on a salt dough bun. This recipe was great and pretty easy.

  2. Bajan macaroni pie: this recipe was similar to the Antiguan and Bahamian macaroni pies we’ve made in the last few weeks, but without eggs.

  3. Pickled cucumbers. This recipe was delicious, but lime juice pickles are really tart!

  4. Falernum, an extract that included almonds, lime zest, and cloves in rum, at least according to this recipe.

  5. Sorrel, a hibiscus tea with allspice berries, fresh grated ginger, and cloves. This recipe also called for simple syrup, but we didn’t add that. (We figured we’d add it when we made cocktails from the sorrel, if we needed it sweeter.
