#19 Belize
We made three dishes for Belize night:
Hudut, a coconut fish stew served over mashed plantains. We followed this recipe.
Belizean rice and beans, which have even more coconut milk. Here’s a recipe.
Cho cho and orange salad, which had a really tasty dressing of mustard, lime juice, coconut oil, caramelized rum, and Dijon mustard. Here’s the recipe.
