For Gambia night, we made:

  1. Domoda, a peanut stew with beans and sweet potato and kale;

  2. Benachin, a Gambian version of Jollof rice with eggplant and carrots;

  3. Fish Yassa, a whole fish fried with onions and served with a mustard sauce; and

  4. For dessert: Thiakry, a pudding made from millet.
